Ingredients

Serves : 3
  • 1 cup long grain rice


  • 2 carrots, peeled and diced


  • 2 large potatoes, peeled and diced in chunks


  • 1/2 cup green peas, frozen and thawed


  • 1 bay leaf


  • 1 green chili


  • 1" stick cinnamon


  • 3 slices of ginger


  • 1 tsp cumin seeds


  • 1 tbsp ginger-garlic paste


  • 1 tsp Bombay biryani/Pulao masala powder


  • 1 tsp malvani masala powder


  • 1 tsp chicken (or meat) masala powder


  • 1.5 tsp salt or to taste


  • 1.5 tbsp olive oil

Directions

  • Wash rice 3-4 times or till water runs clear. Soak it in enough water for at least 30 minutes.
  • Put rice in microwave safe rice cooker along with 2 cups of water, bay leaf, and green chili. Microwave for 10 minutes on high power.
  • In another microwave safe bowl, boil potatoes along with sliced ginger, same bay leaf and green chili from rice for 5 minutes on high power. Add carrots to the bowl and microwave further for 2 minutes. Add green peas and microwave for a minute. Remove container from microwave, drain the water, and keep vegetables aside.
  • In another microwave safe deep glass bowl, heat oil for a minute.
  • To the hot oil, add ginger-garlic paste, stir, and microwave for a minute.
  • Add all the vegetables to the bowl and mix well with the ginger-garlic paste.
  • Add all dry masalas to the vegetables and mix thoroughly. Microwave for a minute on high power.
  • Add rice to the vegetables and mix thoroughly. Microwave again for additional 10 minutes stirring every 2-3 minutes.
  • Transfer rice to serving plate and serve it with raita, papad, or pickles.
